Hakurei Brewing has been rooted in the Tango district of Kyoto Prefecture since its founding in 1832, making it one of the older breweries in the Kyoto region. The Kouden brand is produced entirely from Kyoto-grown Yamada Nishiki rice, cultivated under reduced-pesticide and organic farming contracts, and brewed with ultra-soft water from Fudonoyama with a hardness of just 11.9 mg/liter, softer even than the water used in Fushimi. The lineup ranges from accessible tokubetsu junmai to a daiginjo genshu polished to 35 percent, all shaped by the brewery's commitment to rice flavor and community-based production.
