Now in its sixth generation, the brewery centers its philosophy on umami as the defining characteristic of sake, crafting each batch for fruity aromatics, rice-forward savory depth, and a light finish. Shimane's identity as the origin of Japan's brewing tradition informs the brewery's regional motto: Yamatoo Daisen, sake is Kinpo.
