Founded in 1573 in Hakusan, Ishikawa Prefecture, Kikuhime has built its reputation on an uncompromising commitment to rice: the brewery mills all of its own sake rice in-house — a rarity in the industry — and uses only Yamada Nishiki grown in Special AAA designation fields, the highest grade of the already elite Special A region. Rather than relying on activated charcoal filtration, Kikuhime preserves the sake's natural color and depth, resulting in full-bodied, often aged expressions with aromas of nuts, grain, and caramel. To sustain this craft without depending on the traditional toji system, the brewery launched an in-house Sake Meister training program in the 1980s to cultivate its own future head brewers.
