Founded in 1939 on the Izumo Plain in Shimane Prefecture, Fuji Shuzo named its brand Izumofuji with the aspiration of brewing the finest sake in Japan. The brewery works directly with local farmers to grow Sakanishiki, a premium sake rice originating in Izumo, using eco-conscious methods, and still presses sake in wooden tanks using the traditional kibune shibori technique where brewers stack fabric bags and press by hand.
