Ibinokura

Tokoro Shuzo, based in Ibigawa-cho, Ibi-gun, Gifu Prefecture, produces the Ibinokura brand, named for the Ibi River basin region that surrounds the brewery. The brewery is particularly noted for its early-harvest shiboritate releases, made possible by cooling-equipped fermentation tanks that allow brewing to begin before the standard Japanese season opens in November, yielding fresh, unfiltered, undiluted raw sake. Ibinokura also carries the Bojimaya brand, a wider range of junmai and ginjo styles that showcase the clean, mineral-tinged water of the Gifu highlands.
