Founded in 1862 in Nishinomiya, the oldest district of Nada, Hakutaka KK holds the distinction of being the only sake brewery in Japan designated as the official sake supplier for Ise Jingu, the country's most sacred Shinto shrine. The brewery uses miyamizu, a mineral-rich groundwater found only in a narrow zone south of Nishinomiya that contains roughly ten times more phosphorus than water from other regions, producing the deep, dry character associated with classic Nada brewing. Hakutaka maintains the traditional kimoto-zukuri method, practices single-season winter brewing, and never blends sake from outside the brewery.
