Satou Shuzoten was founded in 1907 at the foot of Mount Chokai in Yurihonjo, Akita Prefecture, naming its flagship sake Dewanofuji after the mountain itself, which rises above the ancient province of Dewa so majestically that it earned the nickname Fuji of Dewa. The brewery relies on subterranean water flowing from Mount Chokai and brews with Akita's AKITA Yukiguni yeast, producing sake with a mellow richness and the clean, honest character that the region's deep snowfalls demand.
