Azumanofumoto Sake Brewery, located at the foot of a Shinto shrine in the Tohoku region, traces its lineage to the Edo period and was formally established in 1896 when the sixth generation of the family took over brewing operations from a local merchant house. The brewery's guiding commitment since founding has been to make sake that satisfies the spirit of the drinker, preserving traditional ginjo techniques while using locally sourced rice. As a newer collaborative project, Azumanofumoto has partnered with students from Tohoku University of Art and Design to co-develop a brand called Tenkyu, aimed at drawing younger generations closer to sake culture.
