Akaiwaomachi

Toshimori Shuzo was founded in 1868 in Akaiwa City, Okayama Prefecture, a region long recognized for producing the highest-quality Omachi rice, a legendary sake rice variety that had nearly vanished by the early Showa period due to agricultural mechanization. In 1982, the brewery bore the financial risk of guaranteeing to purchase all harvested Omachi rice, catalyzing its revival through a local Good-quality Rice Promotion Conference. Today Akaiwaomachi, made from locally grown revived Omachi rice with local water under the Okayama climate, has become nationally recognized as the defining expression of that heirloom variety.
