Ainosawa is produced by Aizawa Shuzo, a brewery founded in 1854 in Sano City, Tochigi Prefecture, using underground water drawn from a well fed by the Akiyamagawa River for a rich, crystal-clear brewing base. The flagship expressions use Gohyakumangoku and Hitogokochi rice grown in Tochigi, and the brewery has won the Governor's Prize in the junmai category for locally sourced rice sake. Ainosawa is recognized for its well-balanced umami and clean taste, with a flavor profile reflecting the quiet, mineral character of its mountain water source.
