Ainosawa is the primary label of Aizawa Shuzo, a brewery in Tochigi Prefecture situated in the foothill zone of the Nasu Highlands, where snowmelt from the Nasu volcanic range produces exceptionally soft, low-mineral brewing water. Tochigi has historically produced sake in a gentle, rounded style shaped by this soft-water character, and Ainosawa reflects that regional tendency.
