油長酒造創立於1719年，坐落於日本酒發源地奈良，旗下「風之森」品牌於1998年誕生，最初源於讓當地人飲用以當地米釀造的生酒之心願，品牌名取自御所市的地名「風之森峠」。酒藏在奈良500年酒造傳統的基礎上融入現代技術，持續探索只有當代才能釀造的日本酒。風之森透過米種與精米步合的不同組合表現多樣的味道，ALPHA系列更以靈活理念與新技術探索未來日本酒的可能性。

沿革
- 1719Began sake brewing in 1719 (Kyoho 4). Originally an oil-pressing business known as "Aburaya Chobei"; the founding year is based on old documents recording purchases of brewing equipment.
- 1998The 12th-generation Chobei Yamamoto launched "Kaze no Mori," an unfiltered, undiluted namazake made from locally contracted Akitsuho rice.
- 2014The 13th-generation Chobei Yamamoto became president of the company.
- 2018Launched "Yamato Distillery," producing the craft gin Kikka Gin.
- 2019Marking its 300th anniversary, the company adopted the mission "to convey a beautiful Japan 100 years into the future through sake brewing," and the 13th generation took on the name "Chobei."
- 2021Began brewing "Mizuhana," fermented entirely in large earthenware jars, at "Kyoho-gura," a renovated brewery building dating to the founding era.
- 2024Started the Katsuragi Sanroku Brewery ("Sanroku-gura") amid terraced rice paddies, beginning production of the new "S Kaze no Mori" series.
