奈良酒自室町時代便開始釀造,在戰國時代迎來了全盛期。誕生於奈良菩提正覺寺的"菩提酛"技術,使安全的酒母製作成為可能,奈良的寺院釀酒因而奠定了現代釀酒的基本技術。菩提酛與釀酒被稱為釀酒的原點,這也是正覺寺被譽為日本酒發祥之地的緣由。織田信長亦有讚美其品質之高的記載。隨著各地釀酒多樣化、山廢與速釀的發展,這一傳統技藝一度幾乎被遺忘,但自1999年起,它作為日本酒的原點在發祥之地正覺寺得以復活。如今,這一傳統與技藝透過"鷹加賀"系列,繼續向世人傳承"奈良之酒"的精髓。
