Horaitsuru Kai Daiginjo is a premium expression from Harahonten in Hiroshima City, designated as a junmai daiginjo under the Kai label, and produced in small batches by the sole brewer-toji who oversees every stage of production. Brewed with Omachi rice polished to 50% or finer and the soft water from the Hijiyama foothills, it delivers a complex, refined character with both fruity aromatics and the deep umami richness that Omachi rice is known for. The underground brewing facility maintains stable temperatures for year-round production.
