Hatsushimo Junmai is brewed entirely from Hatsushimo, a large-grained, late-ripening variety grown only in the Gifu and Seno regions and often called a phantom rice. Otsuka Shuzo is the last brewery in western Gifu to use this notoriously difficult rice, handling every stage by hand at 60% polishing. The result is a food-friendly sake with steady rice umami that holds up equally well cold, at room temperature, or warmed.
