Zaozakura

Miyoshino Jozo is a small family brewery in the Yoshino region of Nara Prefecture, set in a village called Senbonzakura for the thousands of cherry trees covering the surrounding hills. Originally established to produce sacred sake for Kinpusenji temple, the heart of the Shugendo mountain ascetic tradition, the brewery relocated to its current site after a fire and re-started production in 1912. Miyoshino is one of the few breweries in Japan still using the ancient bodaimoto fermentation method, and since 2017 has brewed entirely without added yeast, relying on wild fermentation.
