Yoikana Shuzo Co., Ltd. is the only sake brewery in the historic castle town of Matsumoto, Nagano Prefecture, founded in the early Meiji era and built around the spring water source Metoba-no-Izumi, designated one of the Heisei Era's 100 best water sources by Japan's Environmental Ministry. The brewery pursues sake with 'gorgeous aroma, rich flavor, and crisp finish,' crafted using traditional toji techniques and locally selected brewing rice. Yoikana and its companion label Metoba no Izumi are brewed at this family-run brewery at the foot of the Shinshu mountains, just twenty minutes from Matsumoto Station.
