Metobanoizumi is brewed by Yoikana Shuzo, a brewery from the early Meiji era located in Matsumoto City, Nagano Prefecture, drawing its water from the Metoba-no-Izumi well, recognized among the 100 best waters of the Heisei Era. The brewery uses Sankeinishiki, a rice variety developed in 2017 by the Nagano Prefecture Agricultural Laboratory through crossing Yamadanishiki and Yumenshinano to withstand the harsh alpine winters of the region. This close relationship between the spring water source and the sake's name reflects Yoikana Shuzo's commitment to grounding its craft entirely in the Matsumoto terroir.
