Yamadashoten was founded in 1868 and operates as one of Japan's smallest sake breweries, located in Yaotsucho, Gifu Prefecture, now in its sixth generation. Brewmaster Masaki Uno works almost exclusively alone, producing Tamakashiwa in tiny batches that emphasize close attention to every stage of the process.
