Naeba Shuzo, founded in 1907 in Tsunan-cho, Niigata's most snow-heavy region, brews Shuku using snowmelt water from Mount Naeba and the surrounding mountains, including water recognized among Japan's hundred finest natural springs. The brewery relies on Echigo master brewers and Niigata-grown Gohyakumangoku rice to produce sake that expresses the region's distinct terroir, with an emphasis on the natural richness and balanced flavor that heavy-snowfall environments are known to nurture.
