Kitajima Shuzo Co., Ltd., established in 1805 in Konan City, Shiga Prefecture, produces sake from locally grown Shiga rice under two distinct brands: the long-established Miyosakae, known for elegant and refined character, and Kitajima, a line centered on the traditional kimoto brewing method with an emphasis on aging and enjoyment warmed. The brewery believes that true local sake must be built from the rice of its region, and applies the knowledge gained from kimoto fermentation across its full production.
