Sempyo is the flagship brand of Mizutani Shuzo, a family-run brewery dating from the late Edo period in Aichi Prefecture, with a name derived from the senari hyotan, the gourd crest of warlord Toyotomi Hideyoshi symbolizing abundant harvest. The brewery avoids mechanized production and responds by hand to the yearly variation in rice quality and temperature, with a focus on sweet, subtly aromatic sake made from locally grown Aichi rice.
