Nishijin is the sake of Sasaki Shuzo, founded in 1893 in the Nishijin weaving district of Kyoto and today the only remaining brewery operating within the historic inner city of Kyoto known as Rakuchu. The brewery draws on Fushimizu spring water associated with the tea ceremonies of Sen no Rikyu and brews using entirely hand-crafted methods inherited from the Jurakudai tradition, avoiding filtration and color-stripping to preserve the natural state of the sake.
