Motsuaruto is produced by Kanei Brewing Company, a sake brewery founded in 1868 in Hadano City, Kanagawa Prefecture, by a woman named Riki Sano, making it one of the few breweries in Japan with a female founding history. For over 150 years, Kanei has been the only sake brewery in Hadano, located near the Tanzawa mountain range, and is known for long-running brands including the Sasano Tsuzumi line and the Mozart series, in which koji mold is cultivated while listening to Mozart. The brewery's sake is characterized by a rich, layered flavor rooted in the natural environment of the Kanagawa foothills.
