Momohakubi

Momohakubi is produced by Akaiwa Shuzo, founded in 1923 in Akaiwa City, Okayama Prefecture, in a region renowned as the heartland of heritage Bizen Omachi rice cultivation. The brewery uses a hand-crafted koji process — applying the traditional box-koji method to every grade of sake, not just premium tiers — and employs the ancient and regional朝日 (Asahi) and Akebono rice varieties alongside Omachi to produce sake with a soft, full-bodied character.
