Mizuki is produced by Yoshida Sake Brewing Co., Ltd. — known for their Gassan label — founded in 1743 in Yasugi, Shimane Prefecture, using water drawn from what is described as one of the softest wells in Japan, at just 0.3 hardness. The brand offers a balanced expression with soft sweetness, refreshing acidity, and gentle umami derived from locally sourced Shimane Yamada Nishiki rice, and the brewery has earned over ten gold awards at the National New-Brewed Sake Contest.
