Kawabata Shuzo has been brewing Masukawa in Gyoda City, Saitama Prefecture since 1860, drawing on soft water from the confluence of the Tone and Arakawa river systems that frame the city. Every step from rice washing to fermentation is done by hand with a small team, resulting in a limited production that is sold almost exclusively within Gyoda and its surroundings.
