Koshinobairi is the flagship brand of DHC Shuzo, a brewery tracing its origins to Oguro Shuzo, founded in 1908 in the northern district of Niigata City. The brewery holds organic JAS certification and pursues a philosophy of brewing entirely by hand, aiming to create sake that balances clear refreshment with genuine depth. In 1995, Koshinobairi won first place at the Kanshin Regional Sake Appraisal, and the line has since built a following for its clean, dry finish and restrained ginjo character.
