Homare Ikezuki is the flagship brand of Ikezuki Shuzo, founded in 1903 in Ohnan Town, Shimane Prefecture, near the border with Hiroshima. The brewery works with ultra-soft spring water measuring just 0.3 in hardness, which slows fermentation and allows for the extended low-temperature brewing characteristic of the ginjo method. All sake is pressed by hand using a traditional wooden fune tank, a process that takes two and a half days per tank and draws out a distinctively mellow, aromatic result.
