Chiyotsuru is the signature brand of Nakamura Shuzoujou, a brewery founded in 1804 in Akiruno City in the western reaches of Tokyo, where the Chichibu Paleozoic rock strata filter brewing water drawn from 170 meters underground. The brewery has maintained its craft in this remote corner of the capital for over two centuries, producing sake centered on pure, carefully selected local rice and the pellucid groundwater that defines the style.
