Chidorimasamune is produced by Okamurashuzojo, a brewery founded in 1889 in Sanda City, Hyogo Prefecture, where it draws on locally grown Sanda rice and mineral-rich spring water from the Hazuki River. Originally called Yamakusa Masamune, the brand was renamed in the Taisho era after the chidori, a plover bird long regarded as auspicious in Japanese tradition. The brewery crafts sake with a focus on depth and subtle complexity, representing one of Hyogo's small but dedicated regional producers.
