
Around 1965, we used "Kyokai No. 12 Yeast", which was separated from Ura Kasako Ginjo Masho (Moromi) and later registered with the Japan Brewery Association. Junmai Ginjo Sake features a refreshing aroma, pleasant sourness, and sharp aftertaste.
