Yamada Nishiki polished to 50% is fermented and bottled as an undiluted namazake in this junmai ginjo genshu from Onuma Shuzouten in Miyagi Prefecture. The freshly pressed, unpasteurized genshu format preserves the vivid, concentrated character of Miyagi's Tohoku fermentation.
