Gokkanyukimizudukuri from Sukimusume Shuzo in Fukui is brewed using snowmelt water collected during the coldest months of winter. This cold-water brewing technique, drawing on the pure runoff of the Echizen mountains, is designed to produce a particularly clean and delicate sake.
