Yoyoizumi is the flagship brand of Koshitsukano Shuzo, formed in 1996 through the merger of the Tsukano and Koshi breweries in Niigata, with Tsukano's roots extending back to 1781 when it operated under the name Kawachiya. The brewery uses its proprietary Tsukano Yeast isolated on-site, alongside water from the Agano River and Gohyakumangoku rice, to produce a gently dry sake with light floral notes and a delicate, understated taste.
