Wakaba has been brewing sake in the Toki River basin of Gifu Prefecture for over 300 years, drawing on underground spring water from the mountains surrounding the East Mino region. The brewery crafts a range of junmai and ginjo styles rooted in the cool-climate terroir of the Chubu heartland.
