Takijiman Shuzo was founded in 1868 in Nabari, Mie Prefecture, drawing its brewing water from the Akame 48 Falls, one of Japan's recognized finest water sources. The brewery's guiding principle is to make sake compelling enough that one person wants to drink a hundred cups, rather than a sake so ordinary that a hundred people each drink just one, driving a commitment to small-batch production and close attention to each fermentation tank. Under the Takijiman brand, this philosophy produces a lineup of clean, food-friendly sake rooted in the distinctive soft water and mountain terroir of the Mie highlands.
