Yamamoto Honke has been brewing in the Fushimi district of Kyoto since 1667, when the first Genbee Yamamoto established the brewery on grounds now in their eleventh generation of family stewardship. The brewery draws on Fushimi's famed soft spring water, known locally as Shiragikui or water of white chrysanthemum, to produce its range of sake. Shiniki is one of several brands in the Yamamoto Honke portfolio, encompassing styles from Junmai to fruit-infused expressions such as a yuzu liqueur made with 100% natural yuzu juice.
