Sudo Honke, the oldest operating sake brewery in the world, was founded in 1141 in Obara, Ibaraki Prefecture, and is now run by the 55th generation of the Sudo family. Producing sake under the Satono Homare brand, the brewery makes only small annual quantities and restricts its output exclusively to junmai ginjo and junmai daiginjo, the two highest grades of pure-rice premium sake. The Sudo family's guiding philosophy is that good water makes good sake, drawing from artesian wells that have supplied pure water from beneath towering keyaki trees for centuries.
