Minogawa Shuzo, founded in 1827 in Niigata Prefecture, brews all of its sake with water drawn from the underground currents of the Shinano River, one of Japan's longest rivers. The brewery crafts artisan sake in small batches, with Ryokan representing its traditional range of Niigata-style sake rooted in the prefecture's identity for clean, refined flavors. Its products include the Koshino Omachi daiginjo, made with the historic Omachi rice variety, which has received international critical attention.
