Oishi Shuzo has been crafting sake for roughly 300 years in the Tanba region of Kameoka, Kyoto, relying on veteran Tanba toji and the traditional kimoto method rather than mechanized production. Founded in the Genroku era of the Edo period, the brewery deliberately eschews machines in favor of handmade techniques that harness natural microorganisms to cultivate high-quality yeast. Their representative brand, Okina-tsuru, reflects this long commitment to the slow, careful rhythms of classic Kyoto brewing.
