Hiyoshi Shuzoten was founded in 1912 in Wajima City on the Noto Peninsula, Ishikawa Prefecture, in a region recognized alongside Echizen, Nambu, and Tamba as one of Japan's four great sake-brewing areas. The brewery is operated by its fifth-generation owner-toji on historic Asaichi Street in Wajima, near the city's famous morning market, and its century-old structure survived the January 2024 earthquake with the kuramoto residence and shop intact, though the brewing facilities were heavily damaged. Despite the disaster, the brewery's head brewer joined reconstruction collaboration efforts to keep Noto's sake tradition alive.
