Aoyagi Shuzo was founded in 1868, the first year of the Meiji era, in the Shinomoto district of Yokoshibahikari Town, Chiba Prefecture, a farming region with longstanding access to good-quality water. The brewery produces sake under the Kimmon name using locally grown Takomi rice, aiming for harmony of aroma and taste with a smooth finish. The house range spans honjozo, junmai, daiginjo, and aged genshu styles, representing the quiet continuity of a small Chiba brewery that has brewed for over 150 years.
