Founded in 1716 by Kameoka Kuhei in Uchiko Town, Ehime Prefecture, Chiyonokame Shuzo reached its 300th anniversary in 2016 and has since focused intensively on handcraft and local sourcing. The brewery sources rice from contract farmers in Uchiko Town itself, with brewery workers participating in rice planting, and adheres to a policy of using no machinery harder than the rice grain itself to protect the delicate starch structure. Chiyonokame is also known for a unique frozen-aging product, in which unpasteurized sake is matured for several years at low temperature and then shipped in a solid frozen state.
