Tajime General Partnership has brewed Chikusen in Asago City, Hyogo Prefecture, since 1702, drawing on the pure water of the Takezawa River, whose name provides both the take (bamboo) and sen (spring) characters of the brand. The brewery farms all its rice within a 30-kilometer radius of the kura, working exclusively with contract growers in Asago and Toyooka cities, and produces all its sake as junmai using only the No.7 yeast strain. Chikusen is positioned as a shokuchuu juku sei junmai kan shu (a maturing, pure-rice warm sake for the table), with every bottling designed to pair with food rather than to be consumed on its own.
