Mongai Fushutsu, whose name translates as a recipe too precious to leave the premises, is the flagship brand of Nishibori Shuzo, a Tochigi Prefecture brewery established in 1872 and designated as a National Registered Tangible Cultural Property. Born from a desire to offer high-quality sake in small quantities for local production and local consumption, more than 90% of the brand's output remains within Tochigi Prefecture. The lineup is crafted to complement the bold, soy- and miso-seasoned local cuisine of the region, delivering a soft mouthfeel with perceptible rice character.
