Takahashi Shuzouten brews Horinoi in Shiwamachi, Iwate Prefecture, a district historically connected to the origins of Nanbu toji — the southern Iwate master brewers whose craft spread across Japan. The name derives from the legendary quality of sake fermented with the well water of Horigome, and the brewery maintains its own rice paddies, sourcing dedicated sake-brewing rice from its own fields to sustain a full farm-to-bottle approach.
