Oosawa Shuzo was founded in 1689 in Saku City, Nagano Prefecture, nestled between the volcanic peaks of Asama and Tateshiyama, and uses spring water filtered through those mountains for brewing. The brand name Meikyoushisui, meaning a still mirror and motionless water, evokes the clarity and calm that defines the brewery's ideal aesthetic in sake making. The brewery uses only carefully selected sake-appropriate rice and aims for a sake with both transparent refinement and expressive rice umami, with label calligraphy contributed by master calligrapher Yoshino Daiko.
