Tokoyama Sake Brewery, the oldest brewery in Fukui City, has been producing Jozan sake since 1804, with nine generations of the Tokoyama family guiding the craft through more than two centuries. Rice comes from the Miyama district of Fukui, grown within the Echizen Mountain range, and water is drawn from the Hakusan mountain system, lending the sake a clean, light, and delicate character with a subtly sparkling sensation. Exploring connections between sake and wine, the brewery has also aged its sake in Japanese oak barrels, reflecting a curiosity that runs alongside its deep classical roots.
