Hohoemi

Katayama Shuzo has operated in Nikko, Tochigi Prefecture since 1880, drawing on spring water from the Nikko Mountain Range that has supplied the brewery since its founding. The Hohoemi brand is produced as a Daiginjo expression and is among the brewery's signature offerings. Katayama is one of only about 10% of Tochigi breweries still using the traditional Sase-style pressing technique, in which moromi is hand-stuffed into cloth bags and slowly pressed, and the brewery distributes its sake exclusively within Nikko.
